Chilli Jam & Cashew Stir Fry

  • 8 micro pak choy, trimmed
  • 1 tbs peanut oil
  • 1 tbs chilli jam stir-fry paste
  • 1 lime, quartered
  • ¼ cup salted roasted cashews

1. Wash the micro pak choy and shake dry, leaving a little water clinging.

2. Heat wok over high heat until hot. Add oil and swirl to coat. Add micro pak choy, stir-fry 30 seconds. Add the chilli jam and squeeze over one quarter of the lime. Stir-fry 1 minute until just tender. Add cashews, stir to combine. Serve with remaining lime wedges.
