- 1 tbs olive oil
- 500g beef mince
- 30g pkt taco seasoning
- ¼ cup taco salsa
- 435g can refried beans, warmed
- 10 stand and stuff taco shells, warmed
- 2 vine ripened tomatoes, cut into wedges
- 1 Cos lettuce, shredded
- Coriander leaves, guacamole & lime wedges, to serve
1 Heat oil in a large non-stick frying pan over medium-high heat. Add beef and cook, stirring to break up lumps, for 3 minutes. Add seasoning, cook stirring 2 minutes. Add the salsa, bring to simmer. Simmer 5 minutes until thickened.
2 Spoon beans over warm taco shells. Top with the beef mixture, tomato wedges, lettuce and coriander. Serve with guacamole and lime wedges.
