  • 2 Continental cucumbers, chopped or 3 large Lebanese cucumbers, chopped
  • 4 vine ripened tomatoes, cut into wedges
  • 1 green capsicum, chopped
  • ½ red onion, thinly sliced
  • 50g (⅓ cup) kalamata olives
  • 200g piece Greek fetta, cut into cubes

Dressing

  • 3 tbs extra virgin olive oil
  • 1 tbs red wine vinegar
  • 1 tsp Greek oregano
  • 1 tsp caster sugar

1 Combine the cucumbers, tomatoes, capsicum, onion, olives and fetta in a large bowl. Season well with pepper. Toss gently to combine.

2 Whisk all the dressing ingredients together. Pour over the salad just before serving.
