  • 2 tbs vegetable oil
  • 4 garlic cloves, crushed
  • 3cm piece fresh ginger, peeled, grated
  • 1kg green king prawns, peeled, deveined
  • 1 bunch green shallots, cut into 5cm lengths
  • ½ lemon
  • Cooked jasmine rice, to serve

1. Combine oil, garlic and ginger in a large bowl. Add prawns and stir to coat.

2. Heat a wok over high until hot. Add half the prawns, stir-fry 2 minutes until prawns turn pink. Remove to a plate. Repeat with remaining prawns.

3. Return all the prawns to the hot wok, add the green shallots. Stir fry 1 minute. Squeeze over the lemon, toss to coat. Serve over rice.
