Cucumber, Smoked Salmon
& Dill Salad

- 1 bunch medley radish
- 3 Lebanese cucumber, trimmed
- 1 bunch dill
- 2 green shallots, thinly sliced
- 12 slices smoked salmon
DRESSING
- ⅓ cup extra virgin olive oil
- 1 lemon, juiced
- 1 tsp horseradish cream
1. Trim the radish, wash and pat dry, put into a large bowl. Thinly slice cucumbers into rounds, add to radish. Remove 2 tablespoon dill leaves from bunch, roughly chop and add to the radish with the green shallots.
2. Whisk all the dressing ingredients together with salt and pepper.
3. Arrange 3 slices salmon onto serving plates. Top with salad mix. Spoon over the dressing. Sprinkle with extra dill leaves. Serve.
