Roasted Baby White Turnips
With lemon, garlic
& Parsley

- 12 baby white turnips, trimmed
- 3 tbs extra virgin olive oil
- 2 garlic cloves, crushed
- 1 lemon, halved
- ½ cup continental parsley leaves
1. Preheat oven to 180°C fan forced. Scrub the turnips clean. Put into a small roasting pan. Mix olive oil, garlic and salt and pepper together and spoon over turnips. Turn to coat. Put lemon halves into the pan with the turnips.
2. Roast, turning once, for 10-15 minutes or until light golden on the edges. Remove from the oven, squeeze the warm lemon halves over the turnips and shake well in the pan.
3. Spoon onto serving plates. Scatter over the parsley and serve.
