Pear, Maple Walnut
& Parmesan

- 1 tbs butter
- 2 tbs maple syrup
- ½ cup walnuts
- 1 bunch rocket, ends trimmed, washed
- 1 pear, quartered, cored, thinly sliced
- 40g parmesan, finely grated
DRESSING
- 3 tbs extra virgin olive oil
- 1 tbs red wine vinegar
- 1 tsp horseradish cream
- 1 tsp caster sugar
1. Melt butter in a small frying pan over medium heat. Add maple syrup and walnuts. Cook, stirring 3 minutes until walnuts well coated in thick caramel. Tip out onto a tray lined with baking paper. Set aside to cool.
2. Toss the rocket, pear and Parmesan together. Whisk the dressing ingredients with salt and pepper. Just before serving pour the dressing over the salad. Add the walnuts and toss to combine. Serve.
